In this episode of Wisconsin Foodie we travel to Shullsburg, WI and meet with Chris Roelli of Roelli Cheese. There we we get a behind the scenes tour of the process of making one of Wisconsin’s most unique and innovative cheeses, Dunbarton Blue. Then we travel to Viroqua, WI to meet up with Luke Zahm, owner and chef at the Driftless Cafe. Luke prepares two incredible dishes that incorporate Roelli Cheese.
