This week, we eat some of Roelli Cheese’s award winning cheese and make some incredible dishes with it at Driftless Café.
This week on Wisconsin Foodie, we’re getting rid of the blues by indulging in some Dunbarton Blue! Roelli Cheese Haus started as a standard commodity cheddar plant in Shullsburg, WI. After falling on some hard times, Chris Roelli decided to take the company in a new direction by making small batch artisan style cheeses. The first of which to come out was his now famous Dunbarton Blue cheese. Since then, they have expanded to a number of award winning products, including the amazing Red Rock cheddar. Chris leads us through his process of making a batch of the Dunbarton Blue. Then we check out his cheese caves and taste the Dunbarton Blue, Red Rock, and a special experimental cheese that doesn’t even have a name yet!
From Shullsburg we head north to the Driftless Café in Viroqua, WI. Driftless Café has become a real focal point for the driftless region of Wisconsin, taking in local ingredients from all over the area and bringing them together in some incredible dishes. Owner Luke Zahm brings into the kitchen and uses some of Roelli’s cheese to add another dimension to his cuisine. So join us in this cheese filled week, here on Wisconsin Foodie!

S08 E06 – In this episode, we join George Bregar at Company Brewing as he makes a pale ale with fresh, locally sourced hops. Then we celebrate Oktoberfest with Deb and Dan Carey of New Glarus Brewing.
