This week on Wisconsin Foodie, we find ourselves in Sun Prairie for some amazing pizza’s from Salvatore’s Tomato Pies. New Jersey native Patrick DePula found his second home when he came to Wisconsin years ago. Unfullfilled by his office job, he quit to open up Salvatore’s Tomato Pies. With a focus and pride for local ingredients, Salvatore’s Tomato Pies has quickly become a favorite with foodies and chefs alike. Patrick shows us how he makes some of his favorite pizzas, adorned with his signature tomato sauce swirl.
Patrick then takes us along to Vitruvian Farms to pick up some of his ingredients for the week. Vitruvian Farms was started by a trio of college graduates back in June of 2010. Shawn Kuhn, Craig Merten and Tommy Stauffer didn’t go to college with the intent of farming as a career, but now they can’t imagine doing anything else. With sustainable practices and some of the freshest produce around, Vitruvian Farms has quickly made a name for themselves. Tommy shows us around their greenhouses and introduces us to the farm mascot, Mary the chicken. After he gets his ingredients, Patrick brings us back to Sun Prairie to create the special for his menu for the evening.
Now, it’s time to unwind at the first annual Yum Yum Fest in Madison. The Madison Area Chef Network has banded together to create a festival unlike any other. Local restaurants L’etoile, Merchant, Pig in a Fur Coat, the Underground Food Collective and many, many more bring their culinary expertise to the people in the new Central Park. Madison comes out in droves to partake in the food, music, and good times at Yum Yum Fest! And if that’s not enough to peak your interests, Kyle eats an ice cream sandwich made with pig’s blood. How could you not want to watch that?
