This week on Wisconsin Foodie we go to Door County to visit farmer Tom Lutsey at Waseda Farms. Waseda Farms has made a name for themselves by specializing in certified organic beef, pork, and poultry. They are also on the cutting edge of animal handling techniques with their mobile chicken coops and a revolutionary system for livestock designed by Temple Grandin and Mark Deesing. The new animal handling system is designed to take as much stress off the animal as possible throughout their entire lives. By keeping the stress off of the animal, it affects the final product in a profound and delicious way.

Next, we travel down the road to Wickman House. Mike Holmes and Joe Fahrenkrug opened Wickman House in 2012 and have quickly made it a destination for tourists and locals alike. The Lutsey family joins us to try their own Waseda products as prepared by Wickman House. With a savvy and taste that belies their young age, Mike and Joe treat us to a meal well worth the travel. So grab a glass of your favorite wine and join us this week on Wisconsin Foodie.
