In this episode of Wisconsin Foodie we travel to central Wisconsin to visit with Tony and Sue Renger, owners of Willow Creek Farms. Willow Creek produces some of the best award winning Berkshire pork in the state which is used by chefs like Tory Miller of L’Etoile and Stefano Viglietti of Trattoria Stefano. What separates Willow Creek other than their dedication to quality products is that they also process and smoke all of their own meats (not to mention Tony Renger actually owes the manufacturing company the makes the smokers). We get a tour of their charcuterie facility, smokehouse and finally the pastures where the happy pigs roam free. We then visit the Madison Club in Madison WI for the 1st annual SlowPig event put on by chef Dan Fox. SlowPig is a celebration of heritage pig and people responsible for pushing along the industry.
